How it's cooked (8 steps)
- Press the tofu between paper towels under a heavy pan for 15 minutes to remove excess water, then cut into 1-inch cubes.
- Heat 1 tablespoon of the oil in a large heavy pot or Dutch oven over medium-high heat. Add the tofu in a single layer and pan-fry, turning occasionally, until golden and crisp on most sides, 8-10 minutes. Transfer to a plate.
- Add the remaining 1 tablespoon oil to the pot over medium heat. Add the red curry paste, peanut butter, cinnamon, and cardamom; cook, stirring constantly, until the paste darkens slightly and smells deeply toasted, about 2 minutes.
- Pour in the coconut milk and vegetable broth, scraping up any browned bits from the bottom of the pot; whisk until the curry paste is fully dissolved and the liquid is smooth.
- Add the potatoes, carrots, and onion. Bring to a gentle boil, then reduce the heat to low, cover, and simmer until the potatoes are just tender when pierced with a knife, 18-20 minutes.
- Stir in the crisped tofu, chopped peanuts, brown sugar, and soy sauce. Simmer uncovered until the sauce thickens slightly and coats the back of a spoon, 5-7 minutes.
- Remove the pot from the heat and stir in the lime juice. Season with the kosher salt and more to taste.
- Ladle the curry into bowls and finish with a scattering of extra chopped peanuts.
