How it's cooked (9 steps)
- Preheat oven to 425F. On a rimmed baking sheet, toss the butternut squash with 2 tablespoons olive oil, 1/2 teaspoon salt, and the pepper.
- Roast the squash until tender and caramelized at the edges, 25-28 minutes, stirring once halfway through.
- Meanwhile, bring a large pot of well-salted water to a boil. Cook the pasta until al dente, 9-11 minutes. Reserve 1 cup of the pasta water, then drain the pasta.
- While the pasta cooks, melt the butter in a large skillet over medium heat. Once the foaming subsides, add a few whole sage leaves and swirl the pan until the butter turns deep golden brown and smells nutty and the sage leaves are crisp, 3-4 minutes -- watch closely, as it can burn in the last 30 seconds.
- Use a slotted spoon to lift the crisped sage leaves onto a paper-towel-lined plate; leave the brown butter in the skillet.
- Add the remaining 1 tablespoon olive oil, the chopped sage, garlic, and red pepper flakes to the skillet; cook, stirring often, until the garlic is fragrant, 30-45 seconds.
- Add the roasted squash and drained pasta to the skillet. Toss over medium heat, adding the reserved pasta water a few tablespoons at a time, until a glossy sauce coats the noodles, about 2 minutes.
- Remove the skillet from the heat. Stir in the Parmesan and lemon juice, tossing until the cheese melts into a creamy sauce; season with the remaining 1/2 teaspoon salt to taste.
- Divide the pasta among bowls; top with the toasted walnuts and crisped sage leaves, and finish with more Parmesan.
