How it's cooked (8 steps)
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 4-5 minutes.
- Add the garlic and ginger; cook, stirring constantly, until fragrant, 30-45 seconds.
- Add the red curry paste and cook, stirring, until it darkens slightly and smells toasty, 1-2 minutes — this blooms the paste so the curry doesn't taste raw.
- Add the bell pepper and cauliflower; stir to coat everything in the paste, about 1 minute.
- Stir in the chickpeas, coconut milk, broth, brown sugar, soy sauce, and salt. Bring to a steady simmer, 2-3 minutes.
- Partially cover and simmer, stirring occasionally, until the cauliflower is tender but still holds its shape, 12-15 minutes.
- Stir in the spinach and cook just until wilted, 1-2 minutes.
- Remove from the heat and stir in the lime juice. Taste and add more salt if needed, then ladle into bowls and top with the cilantro.
