How it's cooked (9 steps)
- Heat the oil in a large heavy pot or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 5-6 minutes.
- Add the garlic and ginger; cook, stirring constantly, until fragrant, 30-60 seconds.
- Stir in the curry powder, cumin, turmeric, and cayenne; toast, stirring constantly, until fragrant and a shade darker, about 1 minute.
- Add the tomato paste and cook, stirring, until it darkens slightly and coats the onions, 1-2 minutes.
- Add the chickpeas, coconut milk, and vegetable broth; stir well, scraping up any browned bits from the bottom of the pot, and bring to a simmer.
- Reduce heat to low and simmer uncovered, stirring occasionally, until the sauce thickens slightly and the chickpeas are tender, 12-15 minutes.
- Stir in the kale in two batches, letting each batch wilt into the sauce before adding the next, until all the kale is tender and bright green, 4-5 minutes total.
- Remove from heat and stir in the lime juice and salt; taste and adjust salt as needed.
- Serve hot, spooned over rice.
