How it's cooked (8 steps)

  1. Heat the oil in a large Dutch oven or heavy pot over medium heat. Add the onion and cook, stirring occasionally, until softened and light golden, 9-10 minutes; this is what builds real depth instead of a thin, raw-tasting sauce.
  2. Add the garlic and ginger and cook, stirring, until fragrant, about 1 minute.
  3. Stir in the cumin, turmeric, garam masala, and cayenne; cook, stirring constantly so the spices don't scorch, until they darken slightly and smell toasty, about 30 seconds.
  4. Add the diced tomatoes and cook, mashing them against the pot with a spoon, until they break down and the oil separates and pools at the edges of the pan, 5-6 minutes.
  5. Stir in the chickpeas and vegetable broth, bring to a simmer, then partially cover and cook, stirring occasionally, until the sauce has thickened slightly and the chickpeas are heated through, 12-14 minutes.
  6. Stir in the coconut milk and salt; simmer uncovered, stirring now and then, until the sauce coats the back of a spoon, about 5 minutes.
  7. Add the spinach in two or three handfuls, stirring each addition until wilted before adding the next, 2-3 minutes total.
  8. Remove the pot from the heat, stir in the lemon juice, and taste for salt. Spoon into bowls and serve hot.
