How it's cooked (8 steps)
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent at the edges, 5-6 minutes.
- Add the garlic and ginger; cook, stirring constantly, until very fragrant, about 1 minute.

- Bring to a simmer, then reduce the heat to maintain a gentle simmer. Cook uncovered, stirring occasionally, until the sauce thickens slightly and coats the back of a spoon, 12-15 minutes.
- Stir in the spinach a handful at a time, letting each addition wilt before adding the next, until all the spinach is wilted, about 2 minutes.
- Season with the salt, then stir in the lime juice; taste and add more salt, cayenne, or lime juice as needed. Serve hot.
