How it's cooked (7 steps)
- In a large bowl, whisk together the soy sauce, brown sugar, grated pear, onion, garlic, ginger, sesame oil, mirin, lemon-lime soda, and black pepper until the sugar dissolves.
- Add the short ribs and half the scallions to the marinade, turning the ribs to coat every surface; cover and refrigerate at least 4 hours, up to 24 hours for the deepest flavor. Reserve the remaining scallions, covered, in the fridge for garnish.
- About 30 minutes before grilling, pull the ribs from the fridge so they lose their chill and cook evenly; heat a grill to high (450-500 F) and scrape and oil the grates.
- Lift the ribs from the marinade and let the excess drip off (don't rinse); lay them directly over the high heat and grill undisturbed until deeply charred and caramelized on the first side, 3-4 minutes.
- Flip and grill the second side until similarly charred and the beef reaches 130-135 F for medium, 3-4 minutes more.
- Transfer the ribs to a platter, tent loosely with foil, and rest 5 minutes so the juices settle back in.
- Scatter the reserved scallions and sesame seeds over the ribs and serve hot, with rice.
