How it's cooked (8 steps)

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion is translucent, 5-6 minutes.
  2. Stir in the garlic, tomato paste, chili powder, cumin, and minced chipotles with their adobo sauce; cook, stirring constantly, until the paste darkens and the spices smell toasty, about 1-2 minutes.
  3. Push the vegetables to the side of the pot, add the ground turkey to the cleared space, and raise the heat to medium-high. Let it sit undisturbed until the underside is browned, about 3 minutes, then break it up and stir everything together, cooking until no pink remains and it reaches 165°F, 3-4 minutes more.
  4. Add the crushed tomatoes, black beans, pinto beans, chicken broth, and salt; stir to combine and bring to a boil.
  5. Reduce the heat to low, partially cover, and simmer, stirring occasionally, until the chili has thickened slightly and the flavors have melded, 30-35 minutes.
  6. In a small bowl, whisk the masa harina with 3 tablespoons of the hot chili liquid until smooth, then stir the slurry back into the pot. Simmer uncovered until visibly thickened, about 5 minutes.
  7. Remove the pot from the heat and stir in the lime juice. Taste and season with more salt if needed.
  8. Ladle into bowls and serve hot.
