How it's cooked (9 steps)

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until softened and the onion turns translucent, 5-6 minutes.
  2. Add the sweet potato and cook, stirring occasionally, until it begins to soften at the edges, about 5 minutes. Stir in the garlic and cook until fragrant, 30 seconds.
  3. Add the chili powder, cumin, smoked paprika, cinnamon, and salt; cook, stirring constantly, until the spices turn a shade darker and smell toasty, about 1 minute.
  4. Pour in the crushed tomatoes, black beans, kidney beans, and vegetable broth. Stir well, scraping up any browned bits from the bottom of the pot.
  5. Bring to a boil, then reduce the heat to low, cover partially, and simmer until the sweet potato is fork-tender, 25-28 minutes, stirring every so often so nothing catches on the bottom.
  6. Uncover and continue to simmer, stirring occasionally, until the chili has thickened to a hearty, spoonable consistency, 8-10 minutes.
  7. Using the back of a spoon, mash about a cup of the beans against the side of the pot to thicken the chili further, then stir them back in.
  8. Remove from the heat and stir in the lime juice. Taste and season with additional salt as needed.
  9. Ladle into bowls and serve hot.
