How it's cooked (9 steps)
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery; cook, stirring occasionally, until softened and the onion turns translucent, 6-8 minutes.
- Stir in the garlic, cumin, and smoked paprika; cook until fragrant and the spices darken slightly, about 1 minute.
- Add the tomato paste and cook, stirring constantly, until it darkens to a brick-red color and coats the vegetables, about 2 minutes.
- Add the lentils, broth, diced tomatoes with their juices, and bay leaf, scraping up any browned bits from the bottom of the pot.
- Increase the heat to high and bring the soup to a full boil, about 5 minutes.
- Reduce the heat to low, cover partially, and simmer, stirring occasionally, until the lentils are tender but still hold their shape, 30-35 minutes.
- Remove and discard the bay leaf. Using an immersion blender, puree about one-third of the soup directly in the pot (or carefully transfer 2 cups to a stand blender, puree, and return it) to thicken the base while leaving plenty of whole lentils for texture, about 1 minute.
- Stir in the salt and black pepper and simmer 5 minutes more, until the soup coats the back of a spoon.
- Off the heat, stir in the lemon juice and taste, adding more salt if needed. Ladle into bowls and top with chopped cilantro.
