How it's cooked (10 steps)
- Heat the oil in a large pot or Dutch oven over medium heat. Add the onion and poblano and cook, stirring occasionally, until softened and the onion is translucent, 5-6 minutes.
- Add the garlic, chili powder, cumin, and smoked paprika; cook, stirring constantly, until fragrant, about 45 seconds.
- Stir in the torn tortillas and the diced tomatoes with green chiles, coating everything in the spiced oil, about 1 minute.
- Pour in the chicken broth and add the chicken breasts. Bring to a boil, then cover, reduce heat to maintain a gentle simmer, and cook until the chicken reaches 165°F at the thickest part, 18-20 minutes.
- Transfer the chicken to a cutting board and let rest 5 minutes, then shred into bite-size pieces with two forks; set aside.
- While the chicken rests, purée the soup base directly in the pot with an immersion blender (or carefully in batches in a stand blender) until smooth and visibly thickened, about 1 minute — the softened tortillas are what give this soup its body.
- Return the pot to low heat and whisk in the cream cheese a few cubes at a time until fully melted and the soup is silky, 2-3 minutes.
- Stir in the corn and the shredded chicken; simmer until the corn is heated through, 3-4 minutes.
