How it's cooked (7 steps)

  1. Pat the chicken dry and season with the salt and pepper. Heat the oil in a large 12-inch skillet over medium-high until shimmering, then add the chicken in a single layer and sear until deeply golden on the first side, 4-5 minutes; flip and cook until the second side is browned and the chicken reaches 165F, 3-4 minutes more.   5. Return the chicken and any accumulated juices to the skillet along with the black beans and corn. Bring to a simmer, cover, and cook until the tortilla strips have softened into the sauce and the mixture has thickened to a stew-like consistency, 8-10 minutes, stirring once halfway through.
  6. Uncover and taste; season with additional salt if needed. Sprinkle the cheese evenly over the top, cover, remove from heat, and let stand until the cheese is fully melted, 3-4 minutes.
  7. Scatter the cilantro over the top and serve straight from the skillet.
