How it's cooked (10 steps)
- Bring a large pot of salted water to a boil. Add the potatoes and parboil until a knife slides in with slight resistance, 6-7 minutes; drain well and spread on a sheet pan to steam-dry for 5 minutes.
- Heat 2 tbsp of the oil in a large nonstick skillet over medium-high heat. Add the parboiled potatoes in a single layer and cook, turning occasionally, until deeply golden and crisp-edged on most sides, 8-10 minutes. Transfer to a plate.
- Add the remaining 1 tbsp oil to the same skillet over medium heat. Add the cumin seeds and mustard seeds; cook until the mustard seeds start to pop, 30-45 seconds.
- Add the onion and cook, stirring, until softened and lightly golden at the edges, 5-6 minutes.
- Stir in the ginger, garlic, and serrano; cook until fragrant, about 1 minute.
- Stir in the turmeric, coriander, and cayenne; toast for 30 seconds, then add the crushed tomatoes and cook, stirring, until the raw tomato smell is gone and the mixture darkens slightly, 4-5 minutes.
- Pour in the water and the salt; bring to a simmer.
- Return the crisped potatoes to the skillet along with the frozen peas. Cover and simmer until the potatoes are fully tender and the peas are bright green, 6-7 minutes.
- Uncover and simmer until the gravy clings lightly to the potatoes rather than pooling in the pan, 2-3 minutes. Taste and adjust salt.
- Remove from heat, stir in half the cilantro, and top with the rest. Serve hot with lemon wedges for squeezing.
