- Stir in the diced tomatoes with their juices, bring to a simmer, then reduce the heat to low and cook, stirring occasionally, until the sauce thickens slightly and the raw tomato edge cooks out, 10-12 minutes; adding the sauce this early is what keeps the turkey moist while everything else comes together.
- Stir in the coconut milk and peas and simmer, uncovered, until the peas are heated through and the sauce turns glossy, 3-4 minutes.

- Stir in half of the cilantro.
