How it's cooked (8 steps)
- Preheat the oven to 375°F. Heat the vegetable oil in a large, deep skillet over medium-high heat. Add the ground turkey and cook, breaking it into small crumbles with a spoon, until no longer pink and it reaches an internal temperature of 165°F, 5-6 minutes.
- Add the onion and cook, stirring occasionally, until softened and translucent, 4-5 minutes. Stir in the garlic, chili powder, cumin, and salt; cook until fragrant, about 1 minute.
- Pour in the tomato sauce and enchilada sauce, stirring to combine, and bring to a gentle simmer, 2-3 minutes.
- Remove the skillet from the heat and stir in the black beans and corn until evenly distributed through the sauce.
- Spread about 1 cup of the turkey mixture in the bottom of a 9x13-inch baking dish. Scatter half the torn tortilla pieces over the sauce, top with half the remaining turkey mixture, then sprinkle with 1 cup of the cheese. Repeat with the remaining tortillas and turkey mixture, finishing with the last 2 cups of cheese on top.
- Cover the dish tightly with foil and bake until heated through, about 20 minutes.
- Uncover and continue baking until the cheese is fully melted and bubbling and lightly golden at the edges, 10-12 minutes more.
