  5. Add the tomato paste, cinnamon, oregano, and red pepper flakes; cook, stirring constantly, until the paste darkens slightly and smells toasted, 1-2 minutes.
  6. Pour in the crushed tomatoes and water, then stir in the remaining 1/2 teaspoon salt and the black pepper; bring to a simmer.
  7. Return the eggplant to the skillet along with the chickpeas; stir gently to combine, reduce the heat to low, cover, and simmer until the eggplant is silky and fully tender, 20-25 minutes.
  8. Uncover and simmer 3-4 minutes more to thicken the sauce slightly, then taste and adjust salt.
  9. Remove from heat and stir in half the parsley. Plate the skillet and top with the crumbled feta and remaining parsley.
