How it's cooked (8 steps)
- Heat the oven to 425F. On a rimmed baking sheet, toss the zucchini, bell pepper, mushrooms, and red onion with 3 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Roast, stirring once halfway through, until the vegetables are tender and browned at the edges, 22-25 minutes.
- While the vegetables roast, bring a large pot of well-salted water to a boil. Cook the ziti until just shy of al dente (it will finish cooking in the oven), about 9 minutes. Drain, reserving 1/2 cup of the pasta water.
- While the pasta cooks, warm the remaining 1 tablespoon olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring, until fragrant but not browned, 30-45 seconds.
- Stir in the crushed tomatoes, oregano, red pepper flakes, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper. Simmer, stirring occasionally, until slightly thickened, 8-10 minutes.
- Meanwhile, in a medium bowl, stir together the ricotta, egg, and half the Parmesan until smooth.
- Add the drained ziti, roasted vegetables, and a splash of the reserved pasta water to the tomato sauce; toss until evenly coated.
- Fold the ricotta mixture into the pasta just until streaky, not fully blended. Spread half the pasta in a 9x13-inch baking dish, scatter with half the mozzarella, then top with the remaining pasta, the remaining mozzarella, and the remaining Parmesan.
- Bake until the cheese is melted and golden in spots and the sauce is bubbling at the edges, 20-25 minutes. Let rest 5 minutes before serving.
