How it's cooked (10 steps)
- Heat oven to 425 F. Toss the zucchini, mushrooms, and bell pepper with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper, then spread in a single layer over two rimmed baking sheets. Roast until browned at the edges and most of their liquid has cooked off, 20-25 minutes, stirring once halfway through. Set aside.
- Meanwhile, warm the remaining 1 tbsp olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 5-6 minutes.
- Add the garlic to the pot and cook, stirring, until fragrant, about 1 minute.
- Stir in the crushed tomatoes, oregano, 1/2 tsp salt, and the remaining 1/4 tsp black pepper. Bring to a simmer and cook, stirring occasionally, until slightly thickened, 15-18 minutes. Remove from heat.
- While the sauce simmers, stir together the ricotta, egg, spinach, 1 cup of the mozzarella, 1/2 cup of the parmesan, and the remaining 1/4 tsp salt in a medium bowl until evenly combined.
- Reduce oven temperature to 375 F. Spread 1 cup of the tomato sauce over the bottom of a 9x13-inch baking dish. Lay 3 noodles over the sauce, then spread a third of the ricotta mixture over the noodles, followed by a third of the roasted vegetables and 1 cup of sauce.
- Repeat the layering twice more (noodles, ricotta mixture, vegetables, sauce), ending with the final noodles topped with the last of the sauce.
- Scatter the remaining 2 cups mozzarella and 1/2 cup parmesan evenly over the top. Cover the dish tightly with foil, tenting it slightly so it doesn't touch the cheese.
- Bake covered for 30 minutes, then uncover and bake until the top is bubbling and deeply golden and a knife inserted in the center meets no resistance from the noodles, 20-25 minutes more.
- Let the lasagna rest at least 15 minutes before slicing — this lets the layers set so slices hold together. Cut into squares and serve.
