How it's cooked (6 steps)
- Heat the olive oil in a 12-inch skillet over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until softened and lightly golden at the edges, 7-8 minutes.
- Add the garlic, tomato paste, cumin, paprika, and red pepper flakes; cook, stirring constantly, until the tomato paste darkens slightly and the spices smell toasted, about 1-2 minutes.
- Pour in the crushed tomatoes with their juice, then stir in 1 tsp of the salt and the black pepper. Bring to a simmer, then reduce the heat to medium-low and cook uncovered, stirring occasionally, until the sauce thickens and no longer looks watery, 12-15 minutes.
- Taste the sauce and adjust salt if needed; it should taste bold, since the eggs and bread are unseasoned. Using the back of a spoon, make 6 shallow wells in the sauce, spaced evenly around the pan.
- Crack one egg into each well, sprinkling each egg with a pinch of the remaining 0.25 tsp salt. Cover the skillet and cook over medium-low heat until the egg whites are fully set but the yolks are still jammy and soft when the pan is jiggled, 6-8 minutes for a runny-to-soft yolk, or 9-10 minutes for a firmer set.
- Uncover and scatter the crumbled feta and chopped cilantro over the top. Let the pan sit off the heat for 1-2 minutes to warm the feta before serving directly from the skillet with the warmed crusty bread for scooping.
