How it's cooked (10 steps)

  1. Season the chicken thighs with 1/2 teaspoon of the salt and set aside while you build the masala.
  2. Heat the oil in a large heavy pot or Dutch oven over medium-high heat. Add the cumin seeds and let them sizzle until fragrant, about 30 seconds.
  3. Add the onions and cook, stirring often, until deeply golden brown and jammy, 12-15 minutes -- don't rush this; it's what gives the curry its depth.
  4. Stir in the ginger and garlic and cook until fragrant, about 1 minute.
  5. Lower the heat to medium and add the coriander, turmeric, ground cumin, and cayenne. Toast, stirring constantly, until fragrant, 30-45 seconds -- pull it off heat immediately if the spices start to catch.
  6. Add the crushed tomatoes and remaining 1 teaspoon salt. Cook, stirring occasionally, until the mixture darkens, thickens, and the oil separates and pools at the edges, 8-10 minutes.
  7. Add the chicken and stir to coat in the masala; cook until the surface is no longer pink, 3-4 minutes.
  8. Pour in the water, bring to a simmer, then partially cover and cook, stirring occasionally, until the chicken is tender and cooked through, 165 F internal, 18-20 minutes.
  9. Remove the pot from the heat. Whisk a spoonful of the hot sauce into the yogurt to temper it, then stir the yogurt mixture back into the pot; return to low heat and simmer gently, 3-4 minutes, without letting it boil.
  10. Stir in the garam masala and taste, adding more salt if needed. Scatter with cilantro and serve.
