How it's cooked (4 steps)
- Cook a large quantity of finely diced onion in lard over moderate heat until fully softened and just beginning to colour.
- Remove from heat and stir in paprika, then add the cubed meat, garlic, pepper, tomato, and salt, and cook in its own juices for 5 minutes.
- Add a small amount of water and braise, covered, for 1.5 hours, adding water only in small amounts so the meat stews in concentrated sauce.
- Serve with sour cream and egg noodles or tarhonya pasta.
