How it's cooked (11 steps)
- Preheat the oven to 425F and line a baking sheet with parchment paper.
- In a large bowl, stir together the panko and milk; let sit 2 minutes to soften. Add the ground turkey, egg, half the garlic, half the ginger, 1 tsp of the garam masala, and 1 1/4 tsp of the salt. Mix gently with your hands just until combined — overworking makes the meatballs dense.
- Shape into 16 meatballs, about 1 1/2 inches each, and arrange on the baking sheet.
- Bake the meatballs until firm and lightly browned on top, 13-15 minutes; they will finish cooking through in the sauce, so the centers can still be a touch pink.
- While the meatballs bake, melt the ghee in a large deep skillet over medium heat. Add the onion and cook, stirring occasionally, until softened and light golden, 6-7 minutes.
- Add the remaining garlic, remaining ginger, remaining 1 tsp garam masala, and the smoked paprika; cook, stirring constantly, until fragrant, about 1 minute.
- Stir in the tomato paste and cook, stirring, until it darkens slightly, 1-2 minutes.
- Pour in the crushed tomatoes and the remaining 1 tsp salt. Bring to a simmer and cook, stirring occasionally, until the sauce thickens and deepens in color, 10-12 minutes.
- Reduce the heat to low and stir in the heavy cream until the sauce is smooth and pale orange.
- Nestle the baked meatballs into the sauce, spooning sauce over the tops. Cover and simmer until the meatballs reach 165F and are cooked through, 7-8 minutes.
- Taste the sauce and add more salt if needed. Scatter with the cilantro and serve.
