How it's cooked (9 steps)
- In a medium bowl, toss the chicken strips with the chili powder, cumin, smoked paprika, 3/4 teaspoon of the salt, and the black pepper until evenly coated.
- Heat 1 tablespoon of the oil in a large nonstick or cast-iron skillet over high heat until shimmering. Add the chicken in a single layer, working in two batches so it sears rather than steams, and cook undisturbed until deeply browned on the first side, 3-4 minutes, then flip and cook until browned and cooked through to 165 F, 2-3 minutes more. Transfer to a plate and tent loosely with foil.
- Add 1 tablespoon of the oil to the same skillet over medium-high heat. Add the bell peppers and onion and cook, stirring occasionally, until softened and charred in spots, 6-7 minutes.
- Add the garlic and remaining 1/2 teaspoon salt to the peppers and onion and cook, stirring constantly, until fragrant, 30-45 seconds.
- Return the chicken and any accumulated juices to the skillet with the vegetables and toss to combine; remove from heat and wipe the skillet clean.
- Lay the tortillas on a work surface. Scatter the Monterey Jack and cheddar evenly over one half of each tortilla, top with the chicken-fajita mixture and a sprinkle of cilantro, then fold the tortillas in half to enclose the filling.
- Heat the remaining 1 tablespoon oil in the wiped skillet over medium heat. Working in batches, cook the quesadillas until deeply golden and crisp on the first side, 2-3 minutes.
- Flip each quesadilla carefully and cook until the second side is golden and crisp and the cheese is fully melted, 2-3 minutes more.
- Transfer to a cutting board, let rest 1 minute so the cheese sets slightly, then slice into wedges and serve hot, with sour cream and salsa alongside if you like.
