How it's cooked (8 steps)

  1. In a large bowl, combine the ground turkey, panko, egg, milk, 1 teaspoon of the Cajun seasoning, and 1/2 teaspoon of the salt. Mix gently with your hands just until combined (overmixing makes tough meatballs), then shape into 16 meatballs, about 1 1/2 inches each.
  2. Melt 1 tablespoon of the butter in a large Dutch oven or heavy skillet over medium-high heat. Sear the meatballs in a single layer, working in batches if needed, until deeply browned on two sides, 5-6 minutes total; they won't be cooked through yet. Transfer to a plate.
  3. Reduce the heat to medium and melt the remaining 2 tablespoons butter in the same pot. Whisk in the flour and cook, stirring constantly, until the roux is the color of peanut butter, 8-10 minutes.
  4. Add the onion, bell pepper, and celery to the roux and cook, stirring often, until softened and the onion is translucent, 5-6 minutes. Add the garlic and cook until fragrant, about 30 seconds.
  5. Stir in the crushed tomatoes, broth, smoked paprika, and the remaining 1 teaspoon Cajun seasoning, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
  6. Nestle the meatballs and any accumulated juices back into the gravy. Cover partially and simmer gently, stirring occasionally, until the meatballs reach 165F at the center and the gravy has thickened enough to coat the back of a spoon, 15-18 minutes.
  7. Season the gravy with the remaining 1/2 teaspoon salt and more to taste.
  8. Spoon the meatballs and gravy over the rice to serve.
