How it's cooked (9 steps)

  1. Whisk together the lime juice, 2 tablespoons of the olive oil, garlic, cumin, chili powder, 1/2 teaspoon of the salt, and the black pepper in a large zip-top bag or shallow dish. Add the steak, turn to coat, and marinate at room temperature for 30 minutes (or refrigerate up to 4 hours for deeper flavor).
  2. Remove the steak from the marinade and pat it dry with paper towels; discard the marinade.
  3. Season the steak on both sides with 3/4 teaspoon of the salt.

Transfer to a cutting board, tent loosely with foil, and rest 10 minutes.

Add the bell peppers and onion, season with the remaining 1/2 teaspoon salt, and cook, stirring often and scraping up the browned bits from the bottom of the pan, until softened and lightly charred at the edges, 7-8 minutes.
  6. Slice the rested steak thin against the grain.
  7. Return the sliced steak and any accumulated juices to the skillet with the vegetables; toss to combine and warm through, about 1 minute. Remove from heat and stir in the cilantro.
  8. Warm the tortillas directly over a gas flame or in a dry skillet until soft and lightly charred, about 30 seconds per side.
  9. Pile the steak and vegetable mixture onto the warm tortillas and serve immediately.
