How it's cooked (12 steps)
- Roast the poblanos and jalapeños directly over a gas flame or under the broiler, turning occasionally, until blackened on all sides, 8-10 minutes; transfer to a bowl, cover with plastic wrap, and let steam 10 minutes, then peel, seed, and chop.
- Pat the pork dry and season all over with the salt and pepper.
- Heat the oil in a large Dutch oven over high heat; sear the pork in two batches until deeply browned on all sides, 3-4 minutes per batch, transferring to a plate as it browns.
- Reduce the heat to medium; add the onion to the drippings and cook, stirring occasionally, until softened and translucent, 5-6 minutes.
- Add the garlic and cook until fragrant, about 30 seconds.
- Stir in the cumin and oregano and toast until fragrant, about 30 seconds.
- Sprinkle the flour over the onions and stir to coat, cooking 1 minute to remove the raw flour taste.
- Return the pork and any accumulated juices to the pot along with the roasted chiles, broth, and drained tomatoes; stir to combine, scraping up any browned bits from the bottom of the pot.
- Bring to a boil, then reduce the heat to low, cover, and braise until the pork is fork-tender, about 1 hour 30 minutes, stirring occasionally.
- Add the potatoes and continue to simmer, uncovered, until the potatoes are tender, 20-25 minutes.
- Stir in the lime juice and season with additional salt to taste.
- Ladle into bowls and top with the cilantro.
