How it's cooked (8 steps)

  1. Pat the chicken thighs dry and season both sides with 1/2 teaspoon of the salt. Heat the vegetable oil in a large Dutch oven over medium-high heat; sear the chicken until deeply golden but not cooked through, 3-4 minutes per side. Transfer to a plate.

  8. Remove from heat and stir in the cilantro; season to taste with the remaining salt. Ladle the soup into bowls and top each with a handful of crispy tortilla strips and diced avocado.
