How it's cooked (10 steps)

  1. Whisk together the lime juice, 2 tablespoons of the oil, garlic, chili powder, cumin, 1/2 teaspoon of the salt, and black pepper in a large bowl or zip-top bag. Add the skirt steak, turn to coat, and marinate at room temperature for at least 1 hour or refrigerated up to 4 hours.
  2. Meanwhile, toss the bell peppers and onion with the remaining 2 tablespoons oil and the remaining 1/2 teaspoon salt in a bowl; set aside.
  3. Heat a grill (or grill pan) to high, 450 to 500°F, and oil the grates.
  4. Remove the steak from the marinade, letting the excess drip off, and grill until deeply charred and the internal temperature reads 130°F for medium-rare, 3 to 4 minutes per side.
  5. Transfer the steak to a cutting board and let it rest, uncovered, for 8 to 10 minutes.
  6. While the steak rests, spread the peppers and onion in a grill basket (or a large cast-iron skillet set on the grill) and cook, tossing occasionally, until charred at the edges and just tender with a little bite left, 8 to 10 minutes.
  7. Warm the tortillas directly over the grill grates or in a dry skillet until pliable and lightly speckled, about 20 seconds per side.
  8. Slice the rested steak thinly against the grain on a slight diagonal.
  9. Toss the sliced steak with the grilled peppers, onion, and cilantro.
  10. Pile the steak and vegetables into the warm tortillas and serve immediately with lime wedges.
