How it's cooked (8 steps)
- Heat the olive oil in a large deep skillet or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 5-6 minutes.
- Add the garlic and red pepper flakes; cook, stirring constantly, until fragrant, about 1 minute.
- Stir in the tomato paste and cook, stirring, until it darkens slightly and coats the pan, about 2 minutes.
- Add the cannellini beans, diced tomatoes with their juices, vegetable broth, and parmesan rind. Using the back of a spoon, mash about a cup of the beans against the side of the pot to thicken the broth. Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until the broth thickens slightly, 12-15 minutes.
- Stir in the kale in two batches, letting each batch wilt for about 1 minute before adding the next, until all the kale is tender, 4-5 minutes total.
- Season with the kosher salt and black pepper, then simmer 3-4 minutes more, until the kale is fully tender but still bright green.
- Remove and discard the parmesan rind, then stir in the red wine vinegar.
- Remove from heat and stir in the grated Parmesan until melted. Ladle into bowls and top with more Parmesan.
