How it's cooked (9 steps)
- Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Add the sausage, breaking it into small crumbles with a spoon, and cook, stirring occasionally, until deeply browned and cooked through, 6-8 minutes. Transfer the sausage to a plate with a slotted spoon, leaving the fat in the pot.
- Reduce the heat to medium. Add the onion to the fat in the pot and cook, stirring occasionally, until softened and translucent, 4-5 minutes.
- Add the garlic and red pepper flakes and cook, stirring constantly, until fragrant, about 1 minute.
- Stir in the tomato paste and cook, stirring, until it darkens slightly and coats the onions, 1-2 minutes.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Add the beans and return the sausage to the pot. Bring to a boil, then reduce the heat and simmer uncovered until the beans are heated through and the flavors meld, 12-15 minutes.
- While the stew simmers, toast the bread slices until golden and crisp, about 3 minutes; set aside.
- Stir the kale into the stew a handful at a time, letting each addition wilt before adding more, until all the kale is tender, 4-5 minutes.
- Remove the pot from the heat. Season with the salt and black pepper, then stir in the red wine vinegar to brighten the stew.
- Ladle the stew into bowls, top with the grated Parmesan, and serve with the toasted bread.
