How it's cooked (7 steps)

  1. Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the onion, carrots, and celery, and cook, stirring occasionally, until softened and the onion is translucent, 7-8 minutes.

  3. Stir in the crushed tomatoes, broth, parmesan rind, salt, and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer until the vegetables are tender and the broth tastes deeply savory, 25-30 minutes.
  4. Fish out the parmesan rind (it will be soft); mince any tender scraps and stir them back into the pot, discarding the tough remainder.
  5. Stir in the cannellini beans and pasta. Raise the heat to medium and simmer uncovered, stirring occasionally so the pasta doesn't stick to the bottom, until the pasta is al dente, 9-11 minutes.
  6. Stir in the kale and cook until wilted and bright green, 3-4 minutes.
  7. Taste and season with additional salt if needed. Ladle into bowls and top with the grated parmesan.
