How it's cooked (8 steps)

  1. Heat the oven to 425°F and line a rimmed sheet pan with foil. Place the chicken breasts between two sheets of plastic wrap and pound to an even 3/4-inch thickness with a mallet or heavy skillet — this one move is what keeps sheet-pan chicken breast from drying out.
  2. In a bowl, toss the halved cherry tomatoes with 1 tablespoon of the olive oil, the balsamic vinegar, sugar, half the garlic, and a pinch of the salt and pepper; set aside while the chicken goes in first.
  3. Rub the chicken all over with the remaining 2 tablespoons olive oil, then season both sides with the 1 teaspoon kosher salt, 1/2 teaspoon black pepper, Italian seasoning, and the remaining garlic.
  4. Arrange the chicken breasts in a single layer on the sheet pan and roast until nearly opaque throughout and an instant-read thermometer reads 150°F at the center, 15-18 minutes.
  5. Scatter the tomato mixture, with its juices, around the chicken on the pan and return to the oven; roast until the tomatoes have blistered and released their juices and the chicken reaches 160°F, 8-10 minutes.
  6. Lay a mozzarella round on each chicken breast and switch the oven to broil. Broil until the cheese is melted and browned in spots and the chicken reaches 165°F, 2-3 minutes, watching closely so the cheese doesn't scorch.
  7. Pull the pan and let the chicken rest right on it for 5 minutes so the juices settle back into the meat.
  8. Scatter the torn basil over the chicken and tomatoes, drizzle with the balsamic glaze, and serve straight from the pan.
