How it's cooked (8 steps)

  1. Preheat the oven to 425F with a rack in the upper third. On a large rimmed sheet pan, toss the bell peppers, onion, and garlic with the olive oil, oregano, red pepper flakes, 3/4 teaspoon of the salt, and the black pepper until evenly coated, then spread into a single layer, giving the vegetables room to breathe.
  2. Roast the vegetables alone until they begin to soften and the edges start to blister, about 15 minutes.
  3. Pull the pan out, push the vegetables to the edges, and nestle the sausage links in the center. Return to the oven and roast until the sausages are browned and register at least 160F in the center and the vegetables are deeply caramelized at the edges, 18-20 minutes, turning the sausages once halfway through.
  4. Switch the oven to broil and run the pan underneath just until the pepper edges and sausage casings blister and char in spots, 2-3 minutes; watch closely, this moves fast.
  5. Transfer the sausages to a cutting board and let rest 5 minutes so the juices settle, then slice on a sharp bias into 1-inch pieces.
  6. Return the sliced sausage to the pan and toss everything with the balsamic vinegar, scraping up the caramelized drippings from the pan as you go.
  7. Taste and season with the remaining salt as needed.
  8. Pile the sausage and peppers into the split rolls and serve right away, drippings and all.
