How it's cooked (8 steps)
- Preheat the oven to 425°F. Toss the pepper halves with 1 tablespoon of the olive oil and a pinch of the salt, then arrange cut-side down on a rimmed baking sheet. Roast until the peppers are just tender and lightly blistered at the edges, 15-18 minutes — this drives off their excess moisture so the filling stays saucy, not watery. Remove and set aside, leaving the oven on.
- While the peppers roast, pound the chicken breasts to an even 1/2-inch thickness and season both sides with the black pepper, remaining salt, and half the Italian seasoning. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat and sear the chicken until deeply golden on the first side, 4-5 minutes.
- Flip the chicken, reduce the heat to medium-low, cover, and cook until an instant-read thermometer reads 165°F at the center, 5-6 minutes more. Transfer to a cutting board to rest 5 minutes, then dice into 1/2-inch pieces.
- Add the garlic to the same skillet, still over medium-low heat, and sauté until fragrant, about 1 minute. Pour in 1 cup of the marinara and the remaining Italian seasoning, then stir in the diced chicken; simmer until the sauce clings to the chicken, 2-3 minutes. Remove from heat.
- Wipe out the skillet, melt the butter over medium heat, add the panko, and toast, stirring constantly, until golden brown, 3-4 minutes. Off heat, stir in half the Parmesan; set the crumb topping aside.
- Turn the roasted pepper halves cut-side up on the baking sheet. Spoon the remaining 1/2 cup marinara evenly over the bottoms, then fill each pepper with the chicken mixture, mounding slightly. Top with the mozzarella and remaining Parmesan.
- Bake until the cheese is melted and bubbling and the peppers are fully tender, 10-12 minutes.
- Sprinkle the toasted panko crumb over the peppers, scatter with the fresh basil, and serve warm.
