How it's cooked (8 steps)

  1. Heat 2 tablespoons of the olive oil in a large Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 6-7 minutes.
  2. Add the garlic and ginger; cook, stirring constantly, until fragrant, about 1 minute.
  3. Stir in the cumin, cinnamon, and smoked paprika; cook, stirring constantly, until the spices darken slightly and smell toasted, about 1 minute.
  4. Add the crushed tomatoes, chickpeas, apricots, broth, and 1 teaspoon of the salt. Stir well, bring to a boil, then reduce the heat to low, cover partially, and simmer, stirring occasionally, until the sauce has thickened and the apricots are plump and tender, 25-30 minutes.
  5. About 10 minutes before the stew is done, heat the remaining 1 tablespoon olive oil in a small saucepan over medium heat. Add the couscous and toast, stirring, until lightly golden and fragrant, 1-2 minutes.
  6. Add the water and remaining 1/4 teaspoon salt to the couscous, bring to a boil, cover, remove from heat, and let stand until the water is fully absorbed and the couscous is tender, 5 minutes. Fluff with a fork.
  7. Taste the tagine and adjust salt if needed, then stir in half the cilantro.
  8. Divide the couscous among bowls, spoon the tagine over top, and finish with the remaining cilantro and a squeeze of lemon; serve the remaining lemon wedges alongside.
