How it's cooked (9 steps)
- Pat the halloumi planks completely dry. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the halloumi and sear until deeply golden and crisp on the first side, 2-3 minutes, then flip and sear the second side until golden, 2 minutes more. Transfer to a plate.
- Add the chickpeas to the same skillet, with 1 more tablespoon of oil if the pan looks dry. Cook, stirring occasionally, until the chickpeas are golden and crisped at the edges, 7-8 minutes. Transfer to the plate with the halloumi.
- Add the onion to the skillet and cook, stirring occasionally, until softened and lightly golden, 5-6 minutes, adding a splash more oil if the pan is dry.
- Stir in the garlic, cumin, smoked paprika, and harissa paste; cook, stirring constantly, until very fragrant and the harissa darkens slightly, about 1 minute.
- Pour in the diced tomatoes with their juices and the vegetable broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook, stirring occasionally, until the sauce thickens slightly and no longer tastes raw, 8-10 minutes.
- Season the sauce with the salt and black pepper.
- Return the crisped chickpeas to the skillet and stir to coat them in the sauce; simmer until heated through, 2 minutes.
- Nestle the seared halloumi into the sauce, spooning a little sauce over each piece, and simmer until the halloumi is warmed through and slightly softened at the edges, 2-3 minutes.
- Scatter the cilantro over the skillet and squeeze a wedge of lemon over the top. Serve straight from the skillet with the warm pita for scooping, passing the remaining lemon wedges at the table.
