How it's cooked (9 steps)

  1. Heat 2 tablespoons of the olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion and bell pepper; cook, stirring occasionally, until softened and starting to turn golden at the edges, 6-7 minutes.

  4. Raise the heat to medium-high and bring the stew to a full boil, about 3 minutes.
