How it's cooked (9 steps)

  1. Pat the lamb dry and season all over with 1 teaspoon of the salt and the pepper.
  2. Heat 2 tablespoons of the olive oil in a Dutch oven or heavy soup pot over high heat. Sear the lamb in two batches, without crowding the pot, until deeply browned on all sides, 7-8 minutes per batch; transfer to a plate as it finishes.

  4. Add the garlic, tomato paste, cumin, coriander, cinnamon, and smoked paprika. Cook, stirring constantly, until fragrant and the tomato paste darkens a shade, 1-2 minutes.
  5. Pour in the diced tomatoes and chicken broth, scraping the bottom of the pot to release any remaining browned bits, 1-2 minutes, until the liquid is smooth and simmering.
  6. Return the lamb and any accumulated juices to the pot. Bring to a boil, then reduce the heat to low, cover, and braise until the lamb is fork-tender and shreds easily, 1 hour 45 minutes to 2 hours, stirring occasionally so nothing catches on the bottom.
  7. Stir in the chickpeas and simmer uncovered until they're warmed through and the stew has thickened slightly, 15-20 minutes.
  8. Remove from the heat and stir in the lemon juice and the remaining 1/4 teaspoon salt. Taste and add more salt if needed.
  9. Ladle into bowls and top with the parsley.
