How it's cooked (9 steps)
- In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, 1 teaspoon of the salt, and the pepper.
- Add the chicken cubes and toss until every piece is coated; cover and marinate in the refrigerator at least 2 hours, up to overnight.
- Meanwhile, stir together the yogurt, grated cucumber, dill, and a pinch of salt for the tzatziki; cover and refrigerate until ready to serve.
- Thread the marinated chicken onto skewers, alternating with red onion wedges, dividing evenly among 6 skewers.
- Heat a grill or grill pan to medium-high, about 450°F, and oil the grates well.
- Grill the skewers, turning every 2-3 minutes, until deeply charred on all sides and an instant-read thermometer reads 165°F in the chicken, 10-12 minutes total.
- In the last few minutes, warm the pita directly over the grill or in a dry skillet until soft and lightly toasted, about 30 seconds per side.
- Transfer the skewers to a plate and let the chicken rest 5 minutes.
- Slide the chicken off the skewers and pile onto the warm pita with the tzatziki, cherry tomatoes, and feta; season with the remaining salt to taste.
