How it's cooked (7 steps)

  1. Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 5-6 minutes.
  2. Add the garlic, oregano, and red pepper flakes; cook, stirring constantly, until fragrant, about 1 minute.

  5. Stir in the spinach a few handfuls at a time, until fully wilted, 2-3 minutes.
  6. Remove the skillet from the heat and stir in the lemon juice; taste and add more salt if needed.
  7. Drizzle with the remaining 1 tablespoon olive oil, scatter the feta and parsley over the top, and serve directly from the skillet.
