How it's cooked (10 steps)

  1. In a medium bowl, whisk 2 tablespoons of the olive oil, 2 tablespoons of the lemon juice, half the garlic, the oregano, 1 teaspoon of the salt, and the pepper. Add the chicken and toss to coat; let marinate at room temperature 20 minutes (or covered in the fridge up to 4 hours).

  5. In a separate bowl, toss the cherry tomatoes and red onion with the feta and a drizzle of the remaining olive oil and a pinch of salt; set aside.
  6. Heat the remaining olive oil in a large skillet over medium-high heat until shimmering. Add the marinated chicken in a single layer and sear undisturbed until deeply golden on the first side, 4-5 minutes.
  7. Flip the chicken and cook until golden on the second side and cooked through to 165°F, 3-4 minutes more.
  8. Transfer the chicken to a plate and let rest 5 minutes to keep it juicy.
  9. Divide the rice among bowls, top with the chicken, the tomato-feta salad, and a generous spoonful of the yogurt sauce.
  10. Scatter with the remaining dill and serve.
