How it's cooked (7 steps)

  1. Put the potato chunks in a large pot, cover with cold water by 1 inch, and stir in 1 teaspoon of the salt. Bring to a boil over high heat, then reduce to a steady simmer and cook until a fork slides through with no resistance, 15-18 minutes.
  2. While the potatoes simmer, rinse the portobello caps and scrape out the dark gills with a spoon (this keeps your butter from turning gray), then score the smooth top of each cap in a shallow crosshatch.
  3. In a small bowl, whisk together 2 tablespoons of the olive oil, half the minced garlic, the balsamic vinegar, and the Worcestershire sauce. Brush this marinade over both sides of the mushroom caps and let them sit at room temperature while the potatoes finish cooking, at least 10 minutes.
  4. Drain the potatoes well and return them to the hot pot for 1 minute to steam off excess moisture. Add 3 tablespoons of the butter and the warm milk, then mash with a potato masher until smooth and creamy. Season with the remaining salt and the black pepper, cover, and set aside off the heat.
  5. Heat the remaining 1 tablespoon olive oil in a large cast-iron or heavy skillet over medium-high heat until shimmering. Season the mushroom caps all over with a pinch of salt and pepper, then add them gill-side down and sear undisturbed until deeply browned and they release easily from the pan, 4-5 minutes.
  6. Flip the caps, reduce the heat to medium, and add the remaining 3 tablespoons butter, remaining garlic, and the thyme to the pan. As the butter melts and foams, tilt the skillet and continuously spoon the garlic butter over the caps until the second side is deeply browned and the caps are tender when pierced with a knife, 5-6 minutes.
  7. Transfer the portobello steaks to a cutting board and let rest 2 minutes, then slice each cap thick on a slight bias. Spoon the mashed potatoes onto plates, fan the sliced mushroom steaks alongside, drizzle with the garlic butter left in the pan, and scatter with the parsley.
