How it's cooked (9 steps)

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery; sauté until softened, 6-7 minutes. Add the garlic and sauté until fragrant, about 30 seconds.

  7. Reduce the heat under the pot to low and stir the shredded chicken back in. Slowly pour the tempered egg-lemon mixture into the pot, stirring constantly, until the soup thickens slightly and coats the back of a spoon, 2-3 minutes — do not let it boil or the eggs will curdle.
  8. Season with salt and pepper to taste, then stir in the dill.
  9. Ladle into bowls and serve immediately, garnished with more dill.
