How it's cooked (9 steps)

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, Dijon mustard, oregano, salt, and pepper until you have a smooth marinade.
  2. Set aside 3 tablespoons of the marinade in a small bowl for basting later. Add the turkey cubes to the remaining marinade, toss to coat evenly, cover, and refrigerate for 30 minutes to 2 hours — any longer and the lemon juice starts to make the meat mushy at the edges.
  3. While the turkey marinates, cut the zucchini into 1-inch rounds and the bell peppers and red onion into 1 1/2-inch pieces. If using wooden skewers, soak them in water for 30 minutes so they don't scorch on the grill.
  4. Thread the turkey, zucchini, bell pepper, and onion onto the skewers, alternating pieces and leaving a small gap between each one so everything cooks evenly.
  5. Heat a grill or grill pan to medium-high, about 450°F, and oil the grates well.
  6. Grill the skewers, turning every 3-4 minutes, until the turkey is opaque with good char marks on all sides and reaches an internal temperature of 165°F, 12-14 minutes total.
  7. Brush the skewers with the reserved marinade during the last 2 minutes of grilling for a glossy, well-seasoned finish.
  8. Transfer the skewers to a platter, tent loosely with foil, and let rest 5 minutes so the juices settle back into the meat.
  9. Scatter with the parsley and serve hot, right off the skewer.
