How it's cooked (6 steps)
- Heat the oil in a heavy pot over high heat and brown the lamb in two batches, 8 minutes in all, until the pieces are well coloured. Lift out and set aside.
- Drop the heat to medium and cook the onions in the same fat 10 minutes, until they collapse and take on colour.
- Add the garlic, cinnamon stick, cloves and ground ginger and stir 1 minute over medium heat.
- Return the lamb, add the tomatoes and tomato paste, and let everything come to a bare simmer.
- Season with the sugar, salt, pepper and the slit chilli. Cover and stew 90 minutes over low heat, stirring now and then, until the tomato has broken down into a thick red gravy and the lamb pulls off the bone.
- Add the potatoes and the water, cover again and simmer 30 minutes more, until the potatoes are tender and have thickened the gravy. Serve with white rice.
