How it's cooked (3 steps)
- Simmer pork trotters and shank with vegetables and spices in a large pot of water for four to six hours until the meat is falling off the bone and the broth is very rich.
- Remove bones, shred the meat, arrange in moulds with carrot slices, and strain the broth over the top.
- Refrigerate overnight until firmly set, then unmould and serve cold with horseradish or mustard.
