How it's cooked (10 steps)

  1. Preheat the oven to 425°F. Toss the sweet potato cubes with 1 tbsp of the olive oil and 1/2 teaspoon of the salt on a rimmed baking sheet; roast until tender and caramelized at the edges, 25-30 minutes, stirring once halfway through.
  2. Meanwhile, heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the onion and remaining 1/2 teaspoon salt; cook, stirring occasionally, until softened and lightly golden, 6-7 minutes.
  3. Add the garlic, chili powder, and cumin; cook, stirring constantly, until fragrant, 30-60 seconds.
  4. Add the black beans and 1/2 cup of the enchilada sauce, mashing about a third of the beans against the pan as you stir; simmer until the mixture thickens slightly, 3-4 minutes, then remove from heat.
  5. Once the sweet potatoes are ready, fold them into the bean mixture along with 1 cup of the cheese and the cilantro. Reduce the oven temperature to 375°F.
  6. Spread 1/2 cup of the enchilada sauce over the bottom of a 9x13-inch baking dish.
  7. Warm the tortillas until pliable (stack them, wrap in a damp paper towel, and microwave 45-60 seconds). Fill each tortilla with about 1/2 cup of the sweet potato-bean mixture, roll tightly, and arrange seam-side down in the dish.
  8. Pour the remaining enchilada sauce evenly over the rolled tortillas and sprinkle with the remaining 1 cup cheese.
  9. Bake, uncovered, until the sauce is bubbling and the cheese is melted and browned in spots, 20-22 minutes.
