How it's cooked (9 steps)

  1. Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 5-6 minutes.
  2. Add the garlic and ginger and cook, stirring, until fragrant, about 1 minute.

  5. Add the sweet potatoes, chickpeas, vegetable broth, and dried apricots; stir well to combine.
  6. Bring to a boil, then reduce the heat to low, cover, and simmer, stirring occasionally, until the sweet potatoes are fork-tender, 25-30 minutes.
  7. Uncover and continue to simmer until the sauce has thickened and coats the back of a spoon, 8-10 minutes more.
  8. Stir in the salt, then taste and season with more salt if needed.
  9. Ladle the tagine into bowls and finish each with a scattering of cilantro and toasted almonds.
