How it's cooked (9 steps)

  1. Season the chicken thighs all over with the salt and pepper, then dredge lightly in the flour, shaking off the excess.

  7. While the chicken simmers, toast the almonds in a small dry skillet over medium heat, stirring often, until golden brown and fragrant, 3-4 minutes; set aside.
  8. Uncover the pot, skim any excess fat from the surface, and let the sauce reduce uncovered over medium heat until it clings to the chicken, about 5 minutes.
  9. Spoon the chicken and sauce over the rice, then scatter with the toasted almonds and parsley to serve.
