How it's cooked (9 steps)

  1. Preheat the oven to 450°F and line a large rimmed sheet pan with foil. Halve or quarter the potatoes into 1 to 1.5-inch pieces, keeping them close in size so they cook evenly.
  2. Toss the potatoes with 1 tablespoon olive oil, 1/2 teaspoon smoked paprika, 1/2 teaspoon oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper; spread them cut-side down in a single layer on the pan.
  3. Roast the potatoes alone until just starting to turn golden at the edges, 15 minutes — this head start is what keeps them from turning to mush while the sausage cooks.
  4. Meanwhile, in a large bowl, toss the sliced kielbasa, bell peppers, onion wedges, and garlic with the remaining 2 tablespoons olive oil, remaining paprika, remaining oregano, red pepper flakes, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper.
  5. Pull the pan from the oven and scatter the sausage-vegetable mixture over and around the potatoes in a single layer, giving everything room to brown rather than steam.
  6. Return the pan to the oven and roast until the potatoes are fork-tender and the sausage and pepper edges are browned, 15-18 minutes.
  7. For deeper color, broil 2-3 minutes, watching closely, until the kielbasa and pepper edges are deeply caramelized.
  8. Squeeze the lemon wedges over the pan and sprinkle with parsley.
  9. Taste and adjust salt, then serve hot with whole-grain mustard on the side.
